Lesson Number Four Cancelled.

I was supposed to have my fourth lesson last Sunday and they cancelled on me. I rescheduled for this Friday and they just cancelled on me again. So, needless to say I am not happy and will not be going back to Sea Crest Equestrian Center.
Now I'm on the lookout for a new barn! I still want something close to home and not too pricey. I know there are a few places around me, I just need to check them out and hope I like the trainer.
Lori and Adam will be here tomorrow so it is looking like I wont get to ride again until next weekend. I'm pretty bummed since it'll be three weeks since the last time I rode. Hopefully I won't have forgotten everything I've been working on!

Detroit Tigers Spring Practice.

Since October, Nick and I have been anxiously waiting for baseball season to start. Driving through the orange groves, past Disney and through Lakeland early in the morning brought excitement and joy to the two of us. We were on our way to see the players of our favorite team, the Detroit Tigers!

We started the morning with Starbucks coffee and I had some delicious oatmeal with brown sugar and dried fruit.

 
We saw some hot air balloons drifting gracefully through the morning sky.



When we arrived to Joker Marchant Stadium, we were greeted by a beautiful field of green grass and palm trees.

We headed over to the fences where we got to see everyone walking out to start practice!

Then we headed back to the fence from before and ended up getting the same exact spot as last year to try and get autographs. We ended up with 12 signed balls and 1 signed baseball card! One of the Ramon Santiago balls and the Victor Martinez baseball card is for a coworkers son.

Nick let me stand in front of him and be the getting signatures from everyone, it is my favorite part! Getting to say hi and talk a little bit to the guys that we watch for years play for our favorite team is so exciting! When I asked Victor Martinez for his signature I got to tell him that he's my Tiger! That was my favorite part of the whole day!

We've already mapped out all of the spring training games that we're going to this year... the first one is next Saturday with Nick, my Sister-in-law, Lori and nephew, Adam! We can't wait!

Ginger Glazed Tilapia.

Since it is Ash Wednesday I had to exclude meat from our meal tonight for dinner. Also, because my sister recently moved out on her own to North Carolina and because I want to, I am going to start sharing recipes and meals that I make. As I have stated in prior posts, I am eating with a healthy conscience mind and am working on getting in shape so most of my recipes will be healthy (or at least what I consider to be healthy).

Tonight's meal:

Brown Rice
I threw in a cup of brown rice and 2 cups of water into my beloved rice cooker and let it do its thing for 25 minutes. Then the rice was done!


Asparagus
We had uncooked asparagus left over from my birthday meal so I cut the stems, threw in some onion, a tbs of minced garlic and a tbs of Hoisin Sauce in a skillet and cooked it on medium heat for about 5 minutes.



Ginger Glazed Tilapia with brown rice and asparagus
-Ingredients-
  • 3-4 Tilapia Fillets
  • 3 Tbs. Honey
  • 3 Tbs. Soy Sauce
  • 3 Tbs. Balsamic Vinegar
  • 2 Tsp. Olive Oil
  • 1 Clove Garlic, Minced
  • 1 Tsp. Grated Ginger Root
  • Salt and Pepper, to taste

In a small bowl, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fillets with salt and pepper and place into 9x13 dish. Pour marinade over the fish.



Cover and refrigerate for 20 minutes. Heat vegetable oil in a large skillet over medium-high heat. Remove fish and reserve marinade. Fry fish 4 to 6 minutes on each side, turn once.


Remove fillets to serving platter. Pour marinade into skillet and heat over medium heat until you get a glaze consistency.


Spoon over fillets and rice. Serve immediately.
